the history of the brasserie des tilleuls - bivouak
Founded in 2015, Brasserie BivouaK – also known as Brasserie des Tilleuls – was born in a unique setting, surrounded by hills, lime tree fields and unspoilt nature. Initially based in Sainte-Jalle, it moved to Nyons in 2022, closer to its sources of inspiration.
Behind their beers lies a simple philosophy: taste above all else, with no artificial additives, added flavorings or colorants. Ingredients are chosen with care: barley and malts from local sources, pure spring water, hops selected for their delicate aromas. The owl, the brewery’s emblem, embodies the wild nature and curiosity that drive its creations.

Fresh blondes, characterful ambers, ephemeral recipes, silky stouts… each BivouaK beer tells a Drôme story and invites you to share. Since 2024, the brewery has also been exploring new avenues: craft lemonades, homemade ice creams, alcohol-free beers… always with the same high standards of quality and respect for the environment.
