Clafoutis with fresh figs and lavender honey

We talked about it in our article: 10 vacation souvenirs to bring back home. Lavender honey is typical of our beautiful Baronnies Provençales region. Add freshly picked figs, and you have a delicious clafoutis.

The preparation

  1. Preheat oven to 180°. Generously butter a gratin dish.

  2. Arrange the figs, flesh side up, in the dish.

  3. In a bowl, whisk the eggs with the cane sugar and vanilla sugar. Add the flour, then gradually stir in the milk and cream to obtain a smooth mixture.

  4. Pour the mixture over the figs. Drizzle with lavender honey.

  5. Bake for 35-40 mins, until golden brown and the heart is still slightly quivering.

  6. Let cool, then, if you like, sprinkle with a little powdered sugar before serving.
