Clafoutis with fresh figs and lavender honey
We talked about it in our article: 10 vacation souvenirs to bring back home. Lavender honey is typical of our beautiful Baronnies Provençales region. Add freshly picked figs, and you have a delicious clafoutis.

The preparation
Preheat oven to 180°. Generously butter a gratin dish.
Arrange the figs, flesh side up, in the dish.
In a bowl, whisk the eggs with the cane sugar and vanilla sugar. Add the flour, then gradually stir in the milk and cream to obtain a smooth mixture.
Pour the mixture over the figs. Drizzle with lavender honey.
Bake for 35-40 mins, until golden brown and the heart is still slightly quivering.
- Let cool, then, if you like, sprinkle with a little powdered sugar before serving.

- 80g cane sugar
- 1 sachet vanilla sugar
- 25 cl whole milk
- 10 cl liquid crème fraîche
- 60g flour
- 1 tablespoon lavender honey (adjust to taste)
- 1 knob butter (to butter the dish)
